Cantuccini

If somebody of you ever came to Tuscany it's quite impossible not to have tried 'Cantuccini' or Cantucci, because it's one of the most common biscuit of Italy, and expecially of Tuscany!
We have several versions, the most famous is the one with almonds, otherwise you can find orange, chocolate, or other candies.
This one is the traditional recipe:

Ingredients x 6 people: 300 gr flour, 200 gr sugar, 100 gr almonds, 2 whole eggs and 1 yolk, 1 teaspoon grated orange peel, 1 teaspoon aniseed, 3 gr bicarbonate soda, butter, salt.

Preparation: Sieve the flour and the bicarbonate into a bowl or onto a floured board and gradually mix the sugar, a pinch of salt, the grated orange peel (without the pith), the aniseed and the unblanched almonds.
Break in two eggs, and mix thoroughly, adding a little of milk if the mixture is too dry. Form 3 flat sausage shapes, about an inch wide, lay them on a baking-tray and brush them with egg yolk. Bake in a pre-heated oven at 190°C for about 15 minutes.
Then cut into diagonal slices to obtain tha classical cantuccini shape, and return to the oven for a further 5 minutes. You can serve them with VinSanto or alone.
