Green anchovies

8 salted anchovies, yoke of hard-boiled egg, 1 clove of garlic, 1 sprig of parsley, 1 small bunch of basil, 1 red chilli pepper, 1 dessertspoon vinegar, extra virgin olive oil.

Clean the salt from the anchovies, cut them in half and remove the bones. Crush the garlic and finely chop the parsley, basil, egg-yolk and chilli pepper and mix together with the vinegar and plenty of olive oil. Lay the anchovies on a serving dish, cover with the green sauce, garnish with a few small leaves of basil and parsley and serve.
