Dolci simili son diffusi in tutta Italia, presentando leggere varianti nella ricetta. Si trovano in versione fritta, ma anche in quella cotta in forno, si trovano nei forni e nelle pasticcerie, e anche sui banchi dei supermercati. Il sapore però che ho nel mio patrimonio e nella memoria delle mie papille gustative è il sapore di quelli che faceva la mia nonna, erano croccanti, poco unti ed avevano un leggero aroma di limone. Questa è una ricetta da tenere presente quando abbiamo degli albumi avanzati e non sappiamo come utilizzarli. Un'altra alternativa che ho postato tempo addietro, rimane la classica ricetta delle meringhe.


Ingredienti per circa 35 cialde:

  • 60 gr burro a temperatura ambiente
  • 60 gr zucchero
  • 2 albumi
  • 60 gr farina
  • buccia grattugiata di un limone bio (facoltativa)


Lavorare il burro con lo zucchero finchè non diventa una pomata morbida.
Sbattere gli albumi fino a farli diventare spumosi, usando un frustino incorporare via via il burro.
Setacciare la farina ed aggiungerla poco a poco all'impasto, continuare a sbattere con la frusta.
Aggiungere la buccia grattugiata del limone, se volete dare un tocco aromatico, altrimenti sono buone anche senza.
Far riposare qualche minuto, nel frattempo accendere il forno a 180°C stendere un foglio di carta forno su un teglione.
Con l'impasto formare delle palline ed appiattirle con un coltello, formando dei tondi di diametro 4-5 cm di spessore di pochi mm.
Cuocere per 10 minuti, togliere dal forno e sistemare immediatamente su un mattarello per dare la forma curva.
Far freddare, si può conservare in un vaso di vetro ermetico per una settimana.

This recipe is very useful when we have two or three albumens and we have no ideas on how to use them. An other way to cook albumens is the classical 'meringue' that I posted for Halloween some years ago.

Ingredients for 35 waffers :

  • 60 gr butter (room temperature)
  • 60 gr sugar
  • 2 albumens
  • 60 gr flour
  • grated zest (organic lemon only - facultative)

Beat butter with sugar until it becomes very soft and creamy.
Beat albumens until they become very soft, then add butter, little-by-little.
Sieve flour and add to mixture, continuing mixing.
Add zest if you like to add a flavour otherwise they're very good also in the simple way.
Let the mixture rest for a while and heat oven at 180°C.
Lay parchement paper on a baking tray and shape round portions of mixture on it (4-5 cm diameter, a few mm high).
Cook for 10 minutes as far edges are lightly brown, then take off the oven and lay each one on a rolling pin, so to shape them in the usual curved shape.
Let them dry and store into glass jars.

Cette recette est utile quand nous avons des blanchs d'oeuf que nous restent par autres recettes.
J'avis déja postée une recette pour utiliser les blanchs quand j'avais faites la recette pour les méringues pour Halloween.

Ingrédients pour 35 gaufrettes:

  • 60 gr beurre (à température ambiante)
  • 60 gr sucre
  • 2 blanchs
  • 60 gr farine
  • zeste de citron râpée (facultatif)


Mélanger le beurre avec le sucre.
Fouetter bien les blanches et ajouter le beurre, un peu à la fois.
Tamiser la farine et ajouter au compot.
Ajouter la zeste du citron, si vous aimez donner un 'touche aromatique', c'est facultatif.
Couvrir une plaque de cuisson avec de la papier sulfurisée.
Former des cercles avec une cuillère de compot de 4-5 cm diametre, quelques millimètres de haut.
Cuir au four à 180°C pour 10 minutes.
Sortir les gaufres du four et appuyer sur un rouleau, pour donner la classique forme.
Conserver dans vases de verre.
