Peas with Parma Ham

• 1 kg fresh peas

• 1 onion

• 150 gr Parma ham

• 1 sprig parsley

• stock as required

• butter

• extra-virgin olive oil

• salt and pepper


Put the thinly-sliced onion in a sauce pan with oil and a small piece of butter. When onion becomes to turn gold, add the peas. Moisten with a table spoon of hot water and add salt and pepper. When peas are nearly cooked add the ham and chopped parsley. This recipe can also be used as sauce for Tagliatelle.
