'Ribollita' è una delle ricette più conosciute e rammentate quando si parla di cucina Toscana. La ricetta non è difficile, ma un po' lunga, richiede più o meno 2 ore di esecuzione ma merita! E' anche un modo per usare il pane raffermo evitando così spreco di cibo!
Servono i seguenti ingredienti:
- 400 gr di fagioli secchi,
- cavolo nero in foglie,
- bietola,
- 3 pomodori,
- 2 gambi di sedano,
- 2 carote,
- 1 cipolla bianca grande,
- 2 spicchi di aglio,
- timo,
- pane casereccio raffermo,
- olio d'oliva,
- sale e pepe
Cuocere i fagioli in abbondante acqua e già questo richiederà più di un'ora, perchè il fuoco non deve essere alto, ma devono 'sobbollire' piano piano. Nel frattempo pulire tutte le verdure.
Prendere 3/4 dei fagioli e passarli al mixer. Usare una grande padella, riscaldare l'olio d'oliva e stufare la cipolla con l'aglio.
Quando è cotta aggiungere il sedano, le carote e dopo pochi minuti aggiungere il pomodoro, poi la bietola, il cavolo, timo, sale e pepe. Affettare il pane raffermo e sistemarlo a strati con la verdura.
Far cuocere lentamente per almeno un'ora e se notate che diventa asciutto versare un po' di acqua di cottura dei fagioli, che avrete versato in una capiente pentola insieme ai fagioli rimasti e riscaldare.
Alla fine aggiungere i fagioli rimasti, far riposare mezzora e servire, aggiungendo una 'C' d'olio.

'Ribollita' is one of the most well-known recipes of Tuscan cooking culture! Recipe is not difficult, but it takes a lot of time, in facts it will take you more or less 2 hours but I think it's worthy!
You need dried beans 400 gr, cabbage, swiss chard, 3 tomatoes, 2 stalks of sedano, 2 carrots, 1 onion, 2 cloves of garlic, thymus, homemade bread, olive oil, salt and pepper.
Boil the beans and save the cooking water. This phase will take you 1 hour, so in the meanwhile clean vegetables. When beans are ready take 3/4 of beans and mix the robot, set aside the rest of beans. Take a big skillet, heat some oil and cook the onion and garlic. When it's ready add the celery, carrots and after a few minutes add the tomatoes too. Then add the swiss chard, the cabbage, thyme and salt and pepper. Pour all the cooking water of beans and other ingredients aside from the 1/4 of beans into a sauce pan and let everything cook slowly. It generally takes one hour, so if you notice that the mix becomes dry, add some other warm water. When all the vegetables'll be cooked, drop the rest of beans. Let it rest for half an hour and then, serve the soup. Just add a 'C' of olive oil, directly into the dishes.
Curiosity: 'C' of oil means a small quantity, just the movement we do with the hand, signing a letter C.
