Spinach and mozzarella

This is one of the most easy and quick recipe! Quantities vary depending on your personal taste. I give you the classic recipe, then it depends on your fantasy! ;-)

Boil the spinach with some water with a bit of salt, then take them out of water, squeeze well to eliminate water and drop into a sauce pan with 2-3 table spoons olive oil (or butter, if you prefer). Cook for a few minutes, as far as they drop all the water, then add the mozzarella cheese, cut into cubes. Leave on the fire for a few minutes (1-2 max), then let it rest and serve. The mozzarella melt itself in a few minutes. this recipe is indicated for children!
