When Spring arrives I always want to eat cakes with fruits, also because here in Italy we can easily find strawberries, blueberries and other soft fruits, or in alternate syrup fruits!
This is the basic recipe for 'custard', the one I use also for pies and 'crostate'. In this case the recipe was a 'last minute dessert', so I used syrup blueberries and served the custurd into small glasses.

You need: 40 gr flour (more or less 2 tablespoons), 150 gr sugar, 3 yolks (only yolks without albumen), lemon peel or vanille, 1/2 liter milk
Make the milk boil with lemon peel or vanille and when it reaches the heat, turn the fire off and let it warm.
Mix the flour to sugar and yolks, mix well and if necessary, add a little of cold milk.

Then, drop the mixture into the warm milk. before dropping tha kixture, keep the lemon peel off!
Put again on the fire and let it cook, without boiling. The custard is ready when drawing with a spoon on the surface, you draw like a 'sign', bacause the mixture is soft but not liquid anymore!
In this case I used a very special kitchen tool, which is '
Stirr'. It's not simply a 'tool', because it's better to call it 'kitchen helper'.

La crema pasticcera è una delle ricette base, io la uso sia con frutta fresca che sciroppata, con il cioccolato, nelle crostate e come crema da decorazione dei pandispagna. Nella foto in alto, ho usato mirtilli sciroppati, in quanto trattasi di 'dessert last minute'! :-)
Ingredienti: 40 gr di farina (circa 2 cucchiai), 150 gr di zucchero, 3 tuorli (solo il tuorlo, niente albumi!), scorsa di limone o vaniglia, 1/2 litro di latte
Portare ad ebollizione il latte con l'aroma prescelto, buccia di limone o vaniglia. Quando raggiunge il bollore, spengere il fuoco e far intiepidire.
Mescolare la farina con i tuorli e lo zucchero, se necessario aggiungere un goccio di latte freddo.
Togliere l'aroma dal latte tiepido, versarvi il composto e rimettere sul fuoco. Far cuocere senza che bolla, mescolando attentamente.
La crema sarà pronta, quando disegnando sulla superficie con un cucchiaio, se ne vadrà il segno, senza che sia liquida. Buona da gustare con biscottini tipo i Pandistelle Mulino Bianco!
Nelle foto sopra, come vedete, ho usato un attrezzo di Dmail, che si chiama '
Stirr', che è un vero e proprio aiutante in cucina! Infatti mescola da solo, senza bisogno di star lì a controllare, non sporca perchè non schizza, si smonta senza problemi e si lava velocissimamente!
